Many of us dine at restaurants and through our choices we affect our surroundings. Restaurants, guests and suppliers all need to act. That is why we started the Sustainable Restaurants Network.
Sustainable Restaurants, together with engaged restaurants, aim to make the restaurant business more sustainable. Not enough is happening in this area. In order to decrease the impact that humans have on nature and the Earths’ resources, we need to work actively in all areas.
Sustainability for us relates to five different areas: Food, Environment & Climate, Social Sustainability, Communication, Economy. However, the guest comes first. Dining at a restaurant is an experience that should be enjoyable and feel good – for both the taste buds and the heart!
Who are we?
U&We is the consultancy firm that initiated the initiative and is managing the project. Today, WWF, Mässrestauranger, Oddbird, Destination Sigtuna, Kungliga Djurgårdens Intressenter and U&We are a part of the steering group.
Sustainable Restaurants is not a new certification or an award, instead it is a process with an ultimate objective that we may never reach. However, we are aware that we need begin taking responsibility for the impact that the restaurant business has. This also includes our guests. The pilot study for the project showed that there is a gap between what restaurants do and what the guests want. We want to become better at communicating our sustainability!
What do we do?
We arrange programs digitally and physically in Stockholm, Gothenburg, Malmö and Umeå where we have workshops within food, environment and humanity, economy and certifications, communication. Together with sustainability coaches from Sustainergies, current analysis is carried out at every restaurant and we work with our toolkit to develop the sustainability on spot. We also communicate our work in the restaurants and through different social media.
