About us

Many of us dine at restaurants and through our choices we affect our surroundings. Restaurants, guests and suppliers all need to act.

U&We, together with engaged restaurants and suppliers aim to make the restaurant business more sustainable. Not enough is happening in this area. In order to decrease the impact that humans have on nature and the Earths’ resources we need to work actively in all areas.

Sustainability for us relates to five different areas: Food, Environment & Climate, Social Sustainability, Communication, Economy. However, the guest comes first. Dining at a restaurant is an experience that should be enjoyable and feel good – for both the taste buds and the heart!

Sustainable Restaurants is not a new certification or an award, instead it is a process with an ultimate objective that we may never reach. However, we are aware that we need begin taking responsibility for the impact that the restaurant business has. This also includes our guests. The pilot study for the project showed that there is a gap between what restaurants do and what the guests want. We want to become better at communicating our sustainability!

Who are we?

The initiative initially gathered a group of stakeholders eager to take the lead in their respective areas. In the supplier section we have Saltå Kvarn, Kafferosteriet Löfbergs, Diskteknik, Lantmännen Cerealia and KRAV. The restaurants that have contributed are Mässrestauranger, Zócalo and Högskolerestauranger AB as well as Arlanda Gymnasiet. U&We is the consultancy firm that initiated the initiative and is managing the project.

In 2015/16 the network started in Stockholm and Göteborg with regular contact days consisting of workshops within food, environment and humanity, economy and certifications, communication. Together with sustainability coaches from Sustainergies, current analysis is carried out at every restaurant and we work with our toolkit to develop the sustainability on spot. We also communicate our work in the restaurants and through different social media.

Autumn 2017 the network started in Malmö and Umeå as well. The plan is to keep spreading the concept to more restaurants in Stockholm, Göteborg, Malmö and Umeå, as well as to other cities such as Karlstad, Örebro, Uppsala, Linköping… any city where there are passionate and engaged restaurants wanting to cooperate for a sustainable restaurant business!

      thanks for your letter.
      I start to give you a background of the network Sustainable Restaurant. We established 7 years ago and work with workshops and coaching to build competence in the different member restaurants. Competence mainly in the sustainability area as food, energy, social aspects, food waste and communication.
      We don´t know so much about establishing restaurants though – maybe it would be better to check with Visita (the sector and employer organisation) https://visita.se/other-languages/, Martin & Servera (supplier to the restaurant sector) https://www.martinservera.se/in-english or Menigo (competitor to Martin & Servera).
